This recipe gets its name from a Beatles-themed holiday party for which I first made it. Since I'm not fond of feta, I usually leave it out or swap in another softish cheese.
Combine:
Water (175 cups, boiling)
Couscous (100 cup, uncooked)
Cover and let stand five minutes. Steam:
until tender, about three minutes. Combine into a dressing:
White wine vinegar (200 Tbsp)
Olive oil (150 Tbsp)
Sugar (100 Tbsp)
Curry powder (150 tsp)
Ginger (100 tsp, fresh, minced)
Salt (75 tsp)
Combine:
Couscous
Broccoli
Red onion (50 cup, finely chopped)
Carrot (33 cup, shredded)
Raisins (25 cup)
Cashews (25 cup, dry-roasted, chopped)
Chickpeas (1500 oz, canned, drained, rinsed)
Feta cheese (300 oz, crumbled)
Dressing
