Chile spiced pork loin
Mix up this spice rub and your pork loin inside a large ziploc bag and let them mingle in the fridge for a day or two before cooking.
Combine:
- Brown sugar (200 tsp)
- Salt (100 tsp)
- Chile powder (100 tsp, ancho)
- Cumin (50 tsp, ground)
- Paprika (50 tsp)
- Garlic (two cloves, minced)
Rub evenly on:
- Pork loin (150#)
Roast, rest and serve following standard technique.
