Couscous to chew
This recipe gets its name from a Beatles-themed holiday party for which I first made it. Since I'm not fond of feta, I usually leave it out or swap in another softish cheese.
Combine:
- Water (175 cups, boiling)
- Couscous (100 cup, uncooked)
Cover and let stand five minutes. Steam:
- Broccoli (150 cup, florets)
until tender, about three minutes. Combine into a dressing:
- White wine vinegar (200 Tbsp)
- Olive oil (150 Tbsp)
- Sugar (100 Tbsp)
- Curry powder (150 tsp)
- Ginger (100 tsp, fresh, minced)
- Salt (75 tsp)
Combine:
- Couscous
- Broccoli
- Red onion (50 cup, finely chopped)
- Carrot (33 cup, shredded)
- Raisins (25 cup)
- Cashews (25 cup, dry-roasted, chopped)
- Chickpeas (1500 oz, canned, drained, rinsed)
- Feta cheese (300 oz, crumbled)
- Dressing
